Part of our 8th Anniversary coffee selections, the Gesha Filter Series consist of competition-grade and experimental coffees that is both delicious but promised not to hurt the pockets, source from both Guatemala and Panama.
Perched in the cloud-forests of Chiriquí and nestled between Volcán Barú, the tallest point in Panama, and the Panama-Costa Rican border, sits Finca Santa Teresa (FST) mighty 237-acres estate, in a stunning forest at 1400-1900m above sea level.
FST produce a range of premium specialty coffees, including Gesha, Caturra, Catuai and Pacamara varietals, and service multiple processes. Their Gesha varietal is a regular finalist in the Best of Panama competition, with more than a dozen awards in the last decade.The terroir that the farm sits on – rich volcanic soils, high altitude, weather systems driven by the Pacific and Atlantic and a series of ridges and valleys – drives coffee redolent of honeysuckle, lychee and strawberries.
What got us attracted into purchasing a combined one pallet of FST’s mixed varietal coffee recently is not only just the flavour notes but also the owners primary focus for the well being of the farm, employees and its community. Their commitment to sustainability, for both the environment and the wellbeing of the staffs, and regular investment in infrastructure means that FST owners are always looking to better both their crop and the work environment of the team.
This Estribi Gesha undergoes the traditional natural processing method where only fully ripe cherries are sorted straight after picking and lay to dry on raised bed under the dry altitude sun. These cherries are raked every few hours for even drying and this process usually takes between 4 to 6 weeks, and finished off in a mechanical drying oven to help with the evenness of moisture and water content before dry hulling. Such hard work put in to create a unique sweetness along with high-altitude acidity, we are proud to be supporting and buying from this farm since 2014. You should be too!
For the Gesha Filter Series, both the Gesha varietals from Guatemala and Panama are micro-roasted to order and canned by hands in 150gm serving per unit and they come in whole bean only, with request to grind only on a case by case basis.
