In this series of Dutch Colony's 'The Colonial Reserve' or TCR collection #014 is a delicious single origin microlot grown by Luis Dib David in the town of Minca, Magdalena.  Luis Dib David does not only grow coffee but also generate revenue by extending a Airbnb home farm-stay for tourists visiting Sierra Nevada, which is a popular tourist destination in the region. This is a Fully Washed Pink Bourbon varietal, a rare and coveted find which is the end result of a hybrid between the red and yellow bourbon and it is one out of two coffee that we are showcasing as a bundle in the month of July 2022 to hero processing techniques! The fully washed coffee is harvested following  a strict ripeness criteria, machine pulped followed by being exposed to a dry fermentation process and afterwards, dried on raised beds to ideal moisture content. When we were first sample roasting the pre-shipment sample (PSS) and cupping them the next day, we were enjoying all the floral notes, juiciness of stone-fruits with a lingering sweet chocolate finish.
