Finca Las Moritas is run by husband-wife team Don Jose Higinio Gómez and Aura Libia de Jesús Gómez Garcia–who also run and own multiple other farms throughout the lands surrounding the San Antonio La Paz municipality. As a young child at the age of four, Don Higiniore calls walking shoeless 40 kilometres from Palestina, Guatemala to an area currently known as Aldea Las Moritas. Aldea translates to mean a small community–which this area truly was upon the family’s arrival. There were only fifteen families habituating the land, growing tomatoes, beans, and corn. From here, the community worked to create Aldea Las Moritas.
Don Higinio’s family migrated to locate water and land to raise cattle in order to begin producing and selling cheese and cream.The families within the area were known to transport tomatoes to Guatemala City Market via horse, due to the rough infrastructure and lack of developed roads.The steep and rocky conditions of Aldea Las Moritas still pose an obstacle to this day, requiring horses to manoeuvre to and from the farms.
Despite being located in a steep, mountainous region with dangerous cliffs, Las Moritas is able to grow and harvest carefully cultivated and ripened coffee from the upper reaches of the Sierra de las Minas mountains. Each region is characterized by different soil and can impact the different tasting notes of the coffee. The climate does, however, get dry during the dry season in Guatemala, which requires irrigation to all levels of the farm that are fed by reservoirs. Renovations are currently in place to replant older varietals with newer varietals to improve yield and quality.This coffee is carefully harvested, washed, and dried on patios.There are 20-26 staff members supporting the cultivation and health of the coffee trees with 110 pickers during harvesting.
