In the eastern reaches of Honduras, near the borders of Guatemala and El Salvador, is the department of Ocotepeque. The rich volcanic soils and delicate microclimate make this area ideal for coffee production. Just outside the town of Mercedes is Miraflores, a farm owned and managed by Carlos Roberto Hernández, a third-generation coffee producer.

As one of the founding members of CAFESMO, our exporting partner in Honduras, Carlos is constantly seeking ways to be innovative whilst also assisting his fellow producers. He is also currently the mayor of his small town, and the president of a member committee within CAFESMO. On top of that, he also beautifully maintains his 14-hectare farm, land comprised of coffee and pine trees.

During the harvest, after he carefully picks only the properly ripe cherries, he delivers them to the CAFESMO wet mill, roughly 20 minutes away. At the wet mill, the coffee is pulped, and fermented for 12 – 18 hours to breakdown the external fruit. After fermentation, the coffee is dried in mechanical dryers at a low temperature until the ideal moisture content is reached.

CAFESMO was initiated in 2016 to assist smallholder producers with processing and provide access to international markets. Today, the organization is comprised of over 280 producers, each with 2 – 12 hectares of land, on average. The group is quite diverse, with a mix of men and women, young and old. Coffees are milled with their partners at the Beneficio Santa Rosa.

This year, Miraflores is part of our 2023 Winter Edition retail coffee, and also  formed  the base of our Nutcracker espresso blend, serving in our retail shop for you to enjoy.
