Riverdale Coffee Estate, nestled in the Shevaroys Hills, is graced with an
ideal coffee-growing setting. The hilly terrain, enriched soil, and reliable
rainfall create an environment where coffee plants not only survive but
flourish, yielding high-quality beans. What truly sets this region apart is its
unique microclimate, characterized by cool temperatures and misty
mornings, which contribute to the gradual ripening of coffee cherries and
allow them to develop richer, more complex flavors.

Moreover, this exceptional coffee-growing area benefits from the practice
of shade-grown coffee cultivation. By fostering a harmonious coexistence
between coffee plants and the natural canopy of trees, Riverdale Coffee
Estate not only ensures the sustainability of the ecosystem but also
maintains the integrity of the flavor profile of its coffee beans. This
method protects the cherries from excessive sun exposure, resulting in a
smoother, more nuanced taste that captures the essence of the land and
its unique microclimate.

The cherry selection begins with Mr Prakash Balaraman's seasoned team of pickers, whose expert eyes and nimble hands are trained to identify only the ripest cherries. This critical first step ensures that each coffee cherry chosen is at the peak of its
flavor potential, setting the stage for the exceptional coffee they aim to produce. Hand- picked ripen cherries are washed in natural spring water, to remove all the floats and underripe cherries. Locally sourced pineapple fruits are turned into coffee mossto, sprayed infused onto the coffee cherries during the fermentation process, in an air tight bags for 72 hours. Temperature and ph are monitored in the process to produce consistency in every lots. Once the fermentation is complete cherries are sun dried in raised bed for 25-30 day. During this time, they are consistently turned to ensure a uniform drying process. To maintain precision, they employ a moisture meter, monitoring the beans until they reach an ideal moisture content of 11-13%.

After this meticulous drying process, the team allow the coffee to rest for a month,
a crucial step in the journey towards perfection. This period of maturation
enhances the coffee's flavor and aroma, resulting in a well-balanced and
refined profile.

This coffee was introduced as part of our Festive blend in November 2023 and our roastery team took inspiration, sourced and tasted all the available coffees from India, the land rich with spices and traditional flavours associated with multi-cultural Singapura!  Their tastebuds was attracted to the Peach mossto lot from Riverdale Estate. Truly a coffee to savour with your loved ones!
