Camilo Merizalde has a history within the coffee industry to only produce the best. He began in 1997 when he purchased Finca Santuario in Huila, Colombia. Since the beginning it has always been Camilo’s vision to produce high quality coffees. In 2017 Santuario became the ‘Santuario Project’ in partnership with Camilo’s friends and top coffee professionals. It is now the only specialty coffee producing company operating farms and mills in several countries at various levels.

Cherries are initially soaked in water for 2 hours and fermented for 32 hours with pre-fermented passionfruit and coffee mossto under pressure, with recirculation of this specialised mossto every 8 hours. Secondary anaerobic fermentation is initiated for 30 hours with mossto recirculation every 10 hours. Coffee is then sun dried on African beds for 23-24 days, with a final resting stage for 6 to 16 days to stabilise moisture to 10.5% in grain pro bags. Coffee is then  milled and vaccum packed for export.

The level of attention to detail given to all parts of the chain begins from the position and layout of his farms, to varietals that he selects to plant. This is particularly important as the vast majority of varieties grown at Santuario are extremely high quality but lower yield, more fragile and more demanding than most varieties widely grown in Colombia. The combination of natural environment, volcanic soil and variety allows for the creation of some of the most spectacular coffees available from Colombia. Other than its picturesque charm, Finca Santuario also offered a land with distinctive and crucial qualities, such as microclimates (due to the combination of altitude with warm air from the Cauca river valley), singular volcanic soils, perfect altitude, and a tradition of excellence in the production of coffee. 

Camilio Merizalde of The Santuario Project began working with a relatively new coffee exporter of ours, Condensa Co.Lab partnering with their ECOM network and became an international entity in 2021, expanding to Costa Rica, Brazil and later Mexico. Through this relationship, we  have been supplied with various astounding coffee samples from the project, and later on, falling in love at first sight (or rather taste) with Finca Santuario 'Passionfruit' and featuring it in the Singapore National Coffee Championship 2023. With this coffee, we clinched 4th position in the Barista Championship and 6th position in the Brewers Cup! With less than 3 roasting batches remaining and only around 15kg of roasted coffee for sale in 200gm bags, this is a coffee that you do not want to miss purchasing.
