Origin & Terroir
The cool, green hills of Sul de Minas provide ideal conditions for coffee growing and produce some of Brazil’s finest beans. The region is known locally as ‘Vertentes’, because it forms a border between two very important basins in Brazil: the Grande River Basin (which runs to the south) and the São Francisco River Basin (which runs to the northeast).

Henrique Dias Cambraia, farmer of Fazenda Samambaia, attributes the success of his farm to a combination of various factors, not least: the farm’s geographic location; competent technical management of the plantations, with individualized phytosanitary controls of the planting fields; constant training based on total quality control programs; and, most importantly, the involvement of the whole team that works on the farm.

About San Coffee & The Producers
The farms of the Dias Cambraia family have been receiving technical assistance from Agronomist Josué Pereira de Figueiredo, Ph.D. for over ten years. Dr. Figueiredo was the technical coordinator of Brazilian Coffee Institute (IBC) and was also a Cup of Excellence finalist in 2001 and 2015. Henrique also regularly attends events organised by the Association of the Coffee Producers of Southern Minas Gerais (SulminasCafé) and other similar bodies, to ensure that the Dias Cambraia farms remain at the forefront of new technologies and techniques.

In particular, the farm has large experimental plots where new varieties are trailed. Lots such as this 100% Yellow Catucaí Natural represent one of the more successful varieties.

In 2018, with the assistance from San Coffee, our exporting partner in Brazil, the Bio Recovery project was launched to protect the Permanent Preservation Areas (APP) on coffee farms. Preserving these natural areas helps provide balance between farming and natural ecosystem processes. This initiative will restore natural areas, ensuring the protection of water resources, soil conservation, climate stability, biodiversity, sustainable agriculture, and the well-being of future generations. So far, at Fazenda Samambaia, 8.9 hectares have been planted with nearly 20,000 native tree species. Eight dams and springs have been recovered with 10.6 hectares of land in natural regeneration.

Processing & Flavour Profile
This Natural Process coffee undergoes careful selection and fermentation:


  • Handpicked and floated to remove lower-density cherries
  • Sun-dried on open patios for 14-18 days (weather dependent)

This meticulous process enhances the coffee’s fruit-forward profile, bringing out rich sweetness, balanced acidity, and a smooth, lingering finish. Expect juicy apple notes, complemented by the signature peanut butter and chocolaty depth of Samambaia coffees.
