Origin & Terroir
This exceptional coffee comes from the Alta Mogiana region, situated on the southern borders of Minas Gerais, close to São Paulo State, where altitudes reach up to 1,300 meters above sea level. The Alta Mogiana holds a protected Geographic Indication, signifying the distinct profile and character of coffees from this region. Rich in red volcanic soils and a unique microclimate, the region has been recognized for producing high-quality coffees with a balance of full body, fruitiness, sweetness, and acidity—often exhibiting notes of chocolate, nuts, and caramel.
About Cocapil & The Producers
Cocapil is a cooperative based in Ibaraci, Alta Mogiana, founded in 2001 by Laerce França Faleiros and a group of producers to better represent small and medium coffee farmers. Today, 1,250 producers are part of the cooperative. Since 2016, they have been exporting directly and working on vertically integrating the supply chain to support producers better. Cocapil continuously expands its warehouse and milling capacity, now able to store 300,000 bags, providing greater services and opportunities for its members.
Beyond coffee, Cocapil is committed to sustainability and education, offering training programs for producers on environmental stewardship and engaging with local schools to educate future generations. The cooperative also supports women in coffee through the ‘Cerejas do Café’ group, led by Lais Peixoto Costa Faleiros, empowering female producers in the region.
The Inspiration Behind Sabia Mogiana
Inspired by Brazil’s National Bird—Sabia (Turdus rufiventris), this lot embodies Brazil’s ability to produce fruit-forward coffees. This year, the lot comes from Fazenda São Domingos, managed by Francisco Domingos, and located in Alta Mogiana, Minas Gerais. The farm spans 125 hectares of coffee at 1,100 m.a.s.l, growing Catuaí, Mundo Novo, and Arara varieties. This particular lot is a Mundo Novo Hybrid and Catuai, a standout variety known for its vibrant sweetness and complexity.
Processing & Flavor Profile
This Natural Process coffee undergoes careful selection and fermentation:
✅ Handpicked and floated to remove lower-density cherries
✅ Dry fermented in sealed tanks for up to 36 hours
✅ Sun-dried on open patios for 12-15 days (weather dependent)
This meticulous process enhances the coffee’s fruit-forward profile, bringing out rich sweetness, balanced acidity, and a smooth, lingering finish. Expect juicy fruit notes, complemented by the signature chocolatey depth of Mogiana coffees.
